DIRECTIONS
Add 2 cups beans to 10 cups hot water. Bring to boil for 2–3 minutes. Remove from heat, cover, and set aside for at least 1 hour (preferably 4+). Rinse and drain. For simple boiled beans, place the soaked, rinsed, and drained beans in a large saucepan with fresh hot water. Water should cover beans by about 1”. Boil beans for 10 minutes, then set to low and simmer until tender, about 1–2 hours. Add seasonings such as garlic, onion, oregano, parsley or thyme while simmering.
